CucinaPro 178 Fresh Pasta Set Review

This pasta machine set works! I was hesistant to buy based on other reviews. I have made several batches of pasta & had never done so before. The instructions were adequate to get me started along with having viewed some youtube videos. I made a big pan of lasagna & fettucine alfredo the first night I had this. It is easy if you follow the directions & a lot of fun.

I also bought the motor for this item. Thus far I have only attached it, but have not used the machine with it. I will update this review afterward.

UPDATE:

I have now used this pasta set with the motor attached. All I can say is WOW! What an improvement! Spend the for the CucinaPro Electric Motor - 400-MO, you won't regret it. Make sure that you slide a cutting attachment in place when using the motor or it will make the pasta machine off balance & it will fall over. For me this is not a problem as the cutter attachment makes a handy self-feeder for the dough when the dough sheets get long. The motor also eliminates the annoying falling crank handle & frees both hands to handle the dough which is again convenient when the dough sheets get long. The motor does not attach to the ravioli attachment because that attachment is narrower than the machine, despite what the motor's instructions say, again not a problem for me.

The instructions say to run a batch of dough through the pasta machine & cutters to remove machine oil. I ran 2 complete batches through before I had "clean" dough with no evidence of machine oil.

I paid about 0 for the pasta set & motor. Compare this to the Atlas or Imperia: motor-0, pasta machine with 5 attachments-0; total-0! Note the Imperia is also made by CucinaPro.

Amazon asked me to review this item, but even though i was charged for it it never arrived. I am an amazon prime member and i make thousands of dollars of purchases a year, and most go smoothly, but when it was time to try and report an item that shows in the system as 'shipped' but never made it to my home - well, then you see the entire amazon store is automated and nobody to talk to if there is a problem. The 'call back' feature from customer service has failed, and the special complaint form also had a technical glitch after multiple return visits to the site. For this low of a price it is not worth the agony - but i am hoping SOMEBODY at Amazon may read this and come to the rescue. Maybe Amazon Prime members deserve to get an 800# we can call where a person actually picks up the phone???

I have bought and tried just about all the Chinese Pasta Mixer-Extruders that are being sold today, including the Ronco disaster and the Pasta imPerfect (and its' 3 or 4 clones that have interchangable parts with the Pasta Perfect.) and have decided that you need to invest at least 0 to get a combination unit that has a ghost of a chance of performing decently.

I have had good luck with two different units: The somewhat pricey Kitchen-Aid pasta extruder attachment (which requires the ownership of a Kitchen-Aid mixer, and this cheap little Atlas manual pasta extruder. Both units require you make up the dough in advance. With the Kitchen-Aid you have the dough hook and all the other great equipment. With the Atlas, you can use a fork, flour, eggs, your hands and whatever else, to create your dough.

With the dies included, you can make spaghetti, macaroni, noodles, lasanga and cookies. Who cares about the 8 other dies that don't work very well in the other machines anyhow? It is a manual machine. Nothing to jam or burn out. Easy to clean. And it does its' thing quite well! This is the unit to get if you want do what pasta extruders do best. Roller type pasta makers also have their place, but you can easily afford this little angel and a roller machine as well! Obviously I love it!

I've made hundreds of pounds of pasta over the years, both cooking professionally and at home for my family and friends. In addition to these automatic machines, I've used the SS manual hand crank machines as well, and while they have nostalgia and some positive features, they can't beat the speed of this machine when I'm just cooking at home and want to whip something together. (obviously, I would not recommended using this model in a restaurant setting.)

I purchased this product at home after using an older Simac machine for many years. (It is my mother's machine, and it's very well made and still works great.) The Lello is really an update of that product, and through practice, it will provide excellent pastas.

I COMPLETELY understand people's frustrations; sometimes it can seem like the machine is impossible to master. Here are some easy tips to get good results, beyond the obvious, like reading the instructions. In reality, the main suspect is usually the flour and overuse of liquids, which you can in some ways control, and other ways not.

1) Patience: People are often too quick to add additional water and/or eggs when the dough doesn't seem quite right. Give it 30 seconds between additions, and add the liquids slowly. Otherwise, you'll add more water, it will look right, and then all of a sudden, it will knead and turn into one ball when you go to extrude. This is the #1 way to kill the motor.
2) Precision: Though it's not as critical for this as opposed to baking, (because you can adjust your liquid as you go,) weigh your flour. It will cut down on the batch to batch variation. A cheap digital scale is amazing. Also, always use the same size eggs if you use eggs. It makes consistency easier.
3) Like someone else said, always error on the side of more flour as opposed to water. It's much easier to correct the problem with water than it is by adding more flour.

4) Understand the flour you are using and conditions:
Unfortunately, flour varies year to year, season to season, and depending on where you buy it and how you keep it, bag to bag. In my opinion, this has more of a effect on pasta making than anything else, even though your not actually cooking it in this machine. Also, some flours are more difficult to work with than others; semolina (mixed 50/50 with all purpose) is trickier than just using all purpose and eggs. My advice: find a flour you like, stick with it, and control your conditions. Keep the flour fresh, store it properly, and that goes a long way towards good results.

Overall, I recommend this machine; you will never go back to dry pasta once you get used to how good the fresh is!

I appreciate this product as it takes a lot less time to make gnocchi now. What used to take me the longest was getting the imprint on it with a fork, but now with this, it takes a fraction of the time. Simply press your shaped gnocchi onto the board to get the gnocchi marks.

The only negative is that the wood isn't perfectly smooth. I didn't want to wind up with splinters in my gnocchi... But I didn't have any problems.

CucinaPro Electric Motor - 400-MO Review

I purchased this item to go with the CucinaPro 178 Fresh Pasta Set & I am glad I did. The pasta set is great on its own, but add this motor & you're really in business. It eliminates the constantly falling crank handle which you will see mentioned often in the reviews for a manual pasta set or maker. It also frees up your cranking hand so that you can use both hands to handle your dough which is necessary when the dough sheets get long.

The cord is sufficiently long & heavy. The motor has plenty of power to roll out dough. Even if you are not going to use a cutting attachment, put one on your pasta machine anyway. The motor attached to the pasta machine only makes the whole thing off balance & it will fall over. So slide on an attachment to balance it back out. The attachment also does a great job of serving as a guide for feeding your dough into the machine which again is handy when the dough sheets get long.

I gave this a 4-star rating because while the motor is great, the included instructions are absolutely horrible, probably the worst instructions I have ever seen, with the exception of an item my husband once bought where the item had over 400 parts & instructions in Chinese. There are no pictures showing how to orient the bracket for it to properly hold the motor. Since CucinaPro also makes the Imperia pasta machine, which is just a costlier version of the 178/177 models, I got on their website & downloaded the instructions for the Imperia which included a couple of pictures. After that I was in business:-D The original instructions also state that the pulse button is to be used when attaching the motor to the ravioli attachment. Forget it...the ravioli attachment is narrower than the pasta machine & there is no way to attach the motor to it. As I do not own the more expensive Imperia machine, I cannot tell you if it will attach to that ravioli maker or not. On the 178 pasta set that I have it does not.

In conclusion, I really like this little motor & feel that it was worth the investment. Another viewer felt that the price was high now. But, price that Atlas, Imperia & Roma brand machines with motors & with the attachments included. The 178 pasta set (machine & 5 attachments) with this motor will run you around 0. With the other brands the motor alone will run you that & the machine with 5 attachments will run you another 0...that amounts to 0 to get what I got for 0, which works great...so it really that expensive?

I love my Aroma ARC-560 pasta and rice cooker. I've had mine for over a year now, and it always makes perfect rice. The product description adequately describes the contents, so I won't go into that.

I bought the cooker because it makes brown rice, however I have not made brown rice in it yet. I fell in love with jasmine rice right after I bought the cooker. The keep warm feature works great...I don't have to be so accurate in my finishing times. The sides of the rice pot are marked, so it's super easy to set it up.

As with many rice cookers, you can use this one as a steamer. It comes with a steamer basket that you can place over the rice to cook both at the same time. You can also use the pasta colander as a steamer basket, so you can steam two levels of food at the same time.

I also bought it for the pasta cooker feature. As a pasta cooker it has plenty of volume for family dinner, and frees up a stove top burner for other things.

Clean up is easy. The rice pot and pasta colander are large, but they fit in the dishwasher OK. They are easy to clean by hand, too.

I'm online today buying another one...as a wedding gift for a friend!

I was previously using a pressure cooker an older lady gave me, that had been given to her by her mother. So, needless to say, it was ancient, archaic, cumbersome, and atrocious. I finally gave in and got a new one. I have never used any other kinds of pressure cookers, but this one is definitely a huge step up!

It has something like 8 safety mechanisms built in so it's very difficult to get burned. I like the valve that allows you to choose at what pressure your food gets cooked, and I like how easy it is to twist the lid off. It also comes with a clear glass lid, which is handy. I love love LOVE soups, chilis, and stews, so after pressure cooking the bulk, I can add the more delicate items, cover with the glass lid, and continue cooking in the same pot.

Notice that this is EIGHT quarts - that's 2 gallons - big! Great for folks like me who like to cook for lots of people. This sucker holds a ton of minestrone! If you will be cooking mostly for very few people, this will be too tall and cumbersome for you. You do need a good size space to store all of it (thus the 4 stars).

The trivet is also a nice feature. You can bake potatoes. Or (my fave) butternut squash, then make a soup out of it without having to heat up the oven, and in 1/3 the time. I've been very pleased with this and have already recommended it to everyone.

I tried all kinds of ways to roll the pencil size dough strings for pretzels. By hand, impossible, with a spaghetti tube on the meat grinder of my Kitchen Aid stand mixer, what a mess. Then it occurred to me to roll out a long strip of dough and use this from the drawer. If I'd run it over the dough twice, I could have created pencil sized strips, but I ran it once and made street vendor size pretzel strips. They were beautiful pretzels and so very easy. I didn't roll the crinkles out but could have easily. I just wanted to see what they did with the crinkles. Most faded away with the rise and during baking. I'm no longer dreading making pretzels again.

I can see there is trememdous variability in the quality of this machine, as some can't use it at all due to mechanical failures, and others have no trouble at all with it. For myself, I have had no trouble using it at all. It has worked flawlessly for about 10 batches of pasta; sheets, spaghetti noodles, and flat noodles. I discovered through trial and error that one cup of flour, one egg and a couple tablespoons of milk makes enough pasta for one meal (6 servings). It also makes enough pasta to work with. More than that gets too big for one batch, I had to subdivide in order to work with it. Also, I discovered that thin sheets work great for lasagna, but if you leave it a bit thicker (3 or 4) it goes through the noodle cutters much better. The thinner sheets do not get cut very well in the noodle cutters. I can make up one batch of pasta in about 20 minutes, start to finish. Something else that is in the manual, that should be emphasized is, never wash the machine with water AT ALL. If you do, it will rust. Just brush off the extra flour and put it away.

I have been looking at pasta machines for several years, but the high price for most of them was a turn-off for a tool I wasn't sure would be useful. Along comes the Norpro on sale, and with just a little hesitation I bought it. An evening of playing later finds me kicking myself for the years spent without this tool in my kitchen. The idea of the machine is to roll out pasta dough into a sheet and then further process the sheet into various forms of strip based pasta (think lasagna, fettucine, etc), and this tool does it well enough for my needs at much less cost than comperable machines by other manufacturers. Although marketed for pasta, this also works with other doughs (pie crust, pastry, etc..) and is ideal for creating thin tartlet crusts.

The machine itself is nearly all metal, including the hidden gears which drive the rollers (visable after removing the side covers for those so inclined), and there is good access for cleaning. The clamp and crank handle are both easily removed for storage but hold firmly during use. The clamp has a molded plastic T-handle for turning the screw; in my case this clashes against the drawers under my counter so I have to either open the drawers or clamp it on a table.

The first step is for you to make a dough however you want to (note that if you expect to dump flour and eggs in a bin, hit a button, and come back later to find pasta ready for the pot this tool is not what you are looking for); pasta dough can be very fast and simple to make, a couple of eggs mixed with enough flour to make a stiff ball yields enough finished pasta in about 10 minutes for a full meal for one person or a side dish for 3-4 people.

The second step is to roll the dough to the desired thickness. Adjust the smooth rollers on the machine to their widest setting, take a handfull of the dough from step one and use your hands to pat it more or less flat and about 3/4 or 1/2 an inch thick, and place it between the rollers. Turn the crank and the dough will be passed through the rollers. You may want to use your other hand to catch the dough sheet as it exits the rollers and guide it smoothly away, otherwise it has a tendency to pile up under the roller exit. Dust the sheet lightly with flour if needed to avoid sticking, and repeat rolling a couple of times at this roller setting to condition the dough for further working. Once the dough is conditioned, reduce the spacing between the rollers and continue the rolling process until the desired thickness is obtained.

Step three, if desired, is to use the cutting attachment to create uniform strips. This operates much like the rollers except there is no spacing adjustment and only one pass is required.

got this for my husband for christmas. he's an avid chef & really into making his own pasta. his one request was the imperia pasta machine so that he could roll out perfectly thin sheets to make all his various pastas! thank goodness i found this one because i had read other reviews talking about non-original imperia machines...and i almost bought them. don't know how they perform, but he is absolutely in love with this one. it stays on our counter...never put away.

Why didn't I buy this sooner??? I did a ton of research before purchasing the Imperia Pasta Machine. I decided on this particular machine because of the large number of positive reviews on this site and others as well as an in-person testing of products at Crate & Barrel and Williams-Sonoma. I have now been using it several times a week for a few months.

This machine is very well built and sturdy. I think that you could run over it with a dump truck and it wouldn't get a scratch on it. It is pretty heavy once the fettuccine attachment is on there, so make sure that it is clamped down tight. You will need a pretty significant lip on your counter for the clamp to fit properly (I'd say about at least 1.5-2 inches). I do not believe that this machine will work properly without the clamp (it will slide all over the place), so take this into consideration. I also believe that there is a Good Eats episode where Alton Brown screws or clamps his pasta roller onto an ironing board, so it is possible to use another surface. :)

The simple formula in the manual is quite tasty. Like other reviews have said, it cannot be sticky or the stickiness will transfer to the machine. It should be dry enough to look like it's wrong (which is very hard if you are a bread baker!). For the first run-through, the 1 lb of dough was more than enough to get rid of all of the grease/metal/residue. Just make sure that you roll the dough totally across all of the surfaces because I found the majority of the grease to be on the sides.

The dough rolls smoothly through each setting. One thing that I wish I could change would be the dial. I find it fairly tricky to do with one hand and I usually end up draping the dough over my arm while I use two hands to change the dial settings. It's not that big of a deal and I just make sure to wash my arm before starting. I have not made any other types of pasta dough other than egg, so I cannot comment on how sticky the dough would be with the addition of spinach or tomatoes.

All in all, this a fantastic product that was built to last. Just remember to tighten the clamp... more than once I didn't screw it tight enough and the machine nearly fell off of the counter while I was turning the crank on the tougher low number settings. Be careful... rolling that darn dough is quite addicting!
